Ultra-Quick Pasta Lunch

Mommies, I don’t know about you, but I have two semi-picky eaters at home. Why do I say semi-picky? Because on some days, they’ll eat anything I put on the plates for them, and on some other days, anything I cook is either poisonous or, to put it in their words, “I don’t like it!”. However, they somehow never say no to pasta. They are cray about it. If they had it their way, we will definitely be having pasta for breakfast, lunch, dinner, 24/7, 365 days a year. Thankfully, my husband and I do get the occasional privilege to choose what the family eats. So, phew!
But coming back to this dish. I have a few notes about it. The sausage I’m using is the Vienna sausage, because that’s what we ALWAYS have in the fridge. I have also tried chorizo, though, and it just went to whole lot other level! So I’d definitely recommend trying chorizo at least once. Otherwise, it’s that kind of recipe where you just dump everything together!
Anyway, I think this recipe is good to have for those days when you don’t feel like cooking at all but not in the mood for take out either. Moreover, most of the ingredients are pantry ingredients and what you probably already have on hand. So, what’s there to lose? 😉

Quick Lunch Pasta
Ingredients
- 2 oz Pasta of your choice
- 200 g Vienna sausages, sliced
- 1 tbsp Olive oil
- 1/2 Onion, chopped
- 3 cloves Garlic, minced
- 1 cup Marinara sauce
- 1/2 cup Water
- 1/4 tsp Dried basil
- 1/4 tsp Dried oregano
- Salt to taste
- Pepper to taste
Notes
- In a saucepan, bring water that has been generously salted to a boil. Cook pasta according to the packaging.
- In another pan, sauté sausages until brown. Set aside.
- Add olive oil to the same sauce pan and sauté onion and garlic until the onion has become translucent.
- Return sausages to the pan.
- Add tomatoes and cook until slightly soft.
- Add marinara and water. Bring the sauce to a boil and let simmer on medium low heat for 5 mins.Â
- Add salt and pepper to taste.
- Meanwhile your pasta should be ready. Reserve about half a cup of the pasta water. Drain the pasta and add to the sauce along with the pasta water.
- Mix until every pasta is coated with the sauce.
- Serve and enjoy!
